Mom offered to bake some of her delicious beetroot chocolate cupcakes for the people cocooning.
There are 65 elderly people in our community. Mom decided to bake some extra too. For the nice people distributing her cupcakes with the community newsletter. And of course some for us too :-)
She asked me to help her, because it was a very big job. We ended up baking 96 cupcakes. One batch makes 12 muffins. We had to make 4 double batches.
I’ll explain how to make a single batch. This way the quantities mentioned are enough for 12 cupcakes. It can also be used as a cake. This recipe will be enough for one 10 inch cake.
25 dkg (9 oz) beetroot (pureed)
30 dkg (10 oz) sugar
1/2 tsp vanilla essence
80 ml (1/4 cup) oil
22.5 dkg (8 oz) plain flour
1.5 tsp bicarbonate of soda
pinch of salt
6 tbsp cocoa powder
1.) Combine the pureed beetroot, eggs, vanilla, oil and sugar in a bowl. (You can get cooked beetroots, and blend them to puree.)
2.) In a separate bowl mix the flour, bicarbonate of soda, salt and cocoa.
3.) Mix the dry ingredients into the wet ones until nice and smooth.
4.) With a spoon, portion them into the muffin cases.
5.) Put it in the 180 C oven for about 20 minutes or until it is baked through. You can check if cooked by sticking a probe in. If it is dry when you pull it out, it is ready.
When all the muffins were done, they had to cool down. Then dad and I decorated them. He put the icing on and I got to put on the sprinkles.
